The extra fattiness of Jersey Cow milk makes cheeses smoother and creamier than cheeses made with other milk. This means Marcoot Cave Aged Gouda is more rich and velvety than your average aged gouda. Marcoot has aged this cheese in their man made aging caves, modeled after those in Switzerland, for three months, which lends this gouda and extra deep and complex flavor.
